Dopamine eating: apple muffins
What you eat determines how well your brain functions for the next few hours. So, use this recipe to experiment with how much you personally need to eat to have a really productive morning. I have used this recipe to make 6 muffins. I have found that 2 is enough for me to feel satisfied and efficient for at least 5 hours. You may need 3, you may do well with one. Use the muffins as a tool to really get to know your metabolism.
Wet Ingredients:
1 date
2 large eggs
2 bananas (about 250g with skin on)
1 apple
Put the date, the bananas, the eggs and the apple into a Nutribullet (or similar) and whizz for a few seconds until mixed.
Dry Ingredients:
Place into a glass jug
100g almond flour (I use the Organic Almond Flour from Whole Food Earth)
50g oats (I use the Mighty Oats Organic Porridge Oats from Grape Tree)
20g of hemp seed hearts (I use the Organic Shelled Hemp Seeds from Grape Tree)
1 teaspoon of baking powder
1 tablespoon of raw organic cacao powder (I use Naturya)
Then pour the wet ingredients into the jug containing the dry ingredients. Give it a good stir and then decant into a 6 muffin baking tray (use paper liners).
Top each muffin with 3 walnut halves.
Place in the middle of a pre-heated oven at 180 degrees for about 15 minutes, until the muffins are just firm to the touch.
I hope you enjoy the muffins! Sweetness will depend upon how yellow your bananas are. I have trained my tastebuds into disliking anything too sweet. If you need more sweetness while you train your tastebuds, add an extra date.
